Ingredients:
- 2 cups oats
- 2 large ripe bananas
- 2 large eggs
- 1 cup plain Greek yogurt
- 2 to 3 tablespoons honey (depends on your preferred sweetness)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon (kosher) salt
- 1/2 cup dark chocolate chips
- You can also use regular chocolate chips, nuts, raisins, or dried fruits
Directions:
- Preheat oven to 205C. Line muffin tray with lightly greased paper liners.
- Place all ingredients EXCEPT chocolate chips in a blender, blend on high until the batter is smooth.
- Stir the chocolate chips by hand.
- Divide batter among muffin cups, sprinkle with nuts or more chocolate chips as desired.
- Bake for 15 minutes, until the tops are set and a toothpick inserted in the center comes out clean.
- Let cool in cooling rack and enjoy! 🙂
