Ingredients:
- Cooking spray / EVOO
- 6 large eggs
- 1/4 cup low fat milk
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- dash of garlic powder
- cheese (I use whatever I can find in the fridge)
- chopped green bell pepper
- chopped onions
- chopped tomatoes
- sliced veggies (mushrooms/brocolli/spinach )
Directions:
- Preheat oven to 190C.
- Spray muffin tin with cooking spray or with olive oil.
- Whisk eggs, milk, salt, pepper, and garlic powder.
- Fill the muffin cups with egg mixture, add the chopped vegetables, top with cheese, and bake for 20-25 minutes.
Can be stored in the fridge for up to a week!
