[Food] Breakfast Egg Cups

 

Ingredients:

  • Cooking spray / EVOO
  • 6 large eggs
  • 1/4 cup low fat milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • dash of garlic powder
  • cheese (I use whatever I can find in the fridge)
  • chopped green bell pepper
  • chopped onions
  • chopped tomatoes
  • sliced veggies (mushrooms/brocolli/spinach )

Directions:

  1. Preheat oven to 190C.
  2. Spray muffin tin with cooking spray or with olive oil.
  3. Whisk eggs, milk, salt, pepper, and garlic powder.
  4. Fill the muffin cups with egg mixture, add the chopped vegetables, top with cheese, and bake for 20-25 minutes.

Can be stored in the fridge for up to a week!
